Daniel Granato works as an Associate Professor in Food Science and Health at the Faculty of Science and Engineering, University of Limerick. His research projects are related to the circular economy in food systems, food process/product optimization, development, and bioactivity of foods. A special focus is given to the interaction of bioactive-rich extracts with different human cells lines and their bioactivity in biologically relevant media. Daniel has coordinated research projects and acquired considerable external funding in different countries – €5M and has >210 published peer-reviewed articles and chapters, 6 books, and 5 product patents. Daniel has an h-index of 60 and has supervised over 100 students (B.Sc, M.Sc. MBA, and PhD).
